Over the last few years, organic farming has rapidly developed in the EU and consumers are not only worried about production systems, but also about increasing consumption of foods rich in saturated fatty acids. In this study, organic (O, n=65) and conventionally (C, n= 70) beef cattle were reared until mean liveweight 450-500 kg. The effect of production systems on the lipid composition of intramuscular fat from muscle Longissimus thoracis) was studied. Intramuscular fat content was lower in the muscle of O- compared C-cattle. Composition of fattening acids in Longissimus thoracis, values were similar (p>0.05) between organic- and conventional-animals.
