A comparative study on the effect of various drying methods on chemical composition of tomatoes

Fresh tomatoes of good quality were collected from local market which were first washed, cleaned dried and sliced and kept in steel trays for drying under three methods, such as open sun drying, Solar Cabinet Drier and dehydrated method. The highest moisture percent (90.66%) and lowest (87.35%) were obtained from open sun drying and dehydrated methods respectively. Maximum (12.65%) dry matter was obtained from dehydrated samples. Highest nutrients such as carbohydrate, protein, fat and ascorbic acid (63.97gm/ 100gm), (15.32gm/100gm), (4.77gm/ 100gm), (34.33mgs/100gm) powder were obtained from tomatoes dried under dehydration. The maximum minerals content were also found in dehydrated tomatoes. Less drying time i.e. 8.50 hours was also noted in tomatoes dried under dehydrated tomatoes as compared to solar cabinet drier 18.50 hours and open sun drying 23.00 hours.
