Possibilities for the reduction of nitrate content in root vegetables | Mogućnosti smanjenja sadržaja nitrata u korenastom povrću

One of the important pollutants in agroecosystems is nitrate ion. Nitrates enter food chain particularly through vegetable consumption. In some countries, of the total nitrate intake in human diet, as mush as 90% originates from vegetables. Increased nitrate concentrations provoke methemoglobinemia. Infants and young children are especially sensitive to nitrate in the food. In this paper, we describe technical and technological possibilities for the reduction of nitrate content in vegetables grown in the field and in glasshouses. There is detailed description of the means for reduction of nitrate concentration in edible, thickened root of carrot by cutting of the root system before the harvest. By this procedure, it is possible to reduce significantly nitrate concentration, which may be very important in the production of bio food or food for children.
