The aim of this experiment was to monitor the changes in chemical, physico-chemical and microbiological changes in cuts of carp (Cyprinus carpio) packed in modified atmosphere during the 15 days of storage. The samples were divided into two groups and packed in different gas mixtures. Group A was packed in the mixture consisting of 40% CO2 and 60% N2. Group B was packed in 100% CO2. All samples were stored for 15 days in controlled environment at the temperature of +3 deg C. The investigations were carried out on the 1st, 3rd, 6th, 9th, 13th and 15th day of storage. The investigated parameters were: pH value, total volatile nitrogen, total count of aerobic mesophillic bacteria and total count of Enterobacteriaceae. Average pH in group A was the lowest on the 15th day of storage (6,30 +/- 0,03), while the lowest pH for the group B was recorded on the 9th day (6,13 +/- 0,06). Total count of aerobic mesophillic bacteria increased in both groups of samples. The increase of total viable count in skin and muscle was slower in cuts packed in 100% of carbon dioxide compared to samples packed in 40% of the same gas. Modified atmosphere decreased total count of Enterobacteriaceae, lowest value recorded in cuts packed in 100% CO2. On the 15th day of experiment, Enterobacteriaceae count of B group of samples was log CFU/g 1,78 +/- 0,08 in muscle and log CFU/g 1,96 +/- 0,23 in skin.
