Fatty acids and colour of animal fats | Masne kiseline i boja životinjskih masti

This paper investigates the influence of age, sex and breed on some characteristic of lamb and sheep fats obtained in laboratory by dry rendering of separate kidney fatty tissue of animals from controlled breeding in Central Bosnia. Fatty acids composition and color index was determined and compared with commercial lamb and sheep fats, other animal fats (beef tallow and lard) as well as two vegetable fats (palm fat, hydrogenated vegetable fat) and sunflower oil. Lamb and sheep fats and beef tallow contained more saturated fatty acids (slightly over 50%) than lard and vegetable fats and oils. Pramenka ewes gave the fat with less saturated fatty acids compared with fat crossbreds while, the Pramenka rams gave fat with more saturated from fatty acids. The fat from male animals of both breeds contained the larger quantity of saturated fatty acids which was not the case with female animals. However, these differences were not statistically significant and were independent of age, breed and sex of the animals. Among individual saturated fatty acids the most represented were stearic and palmitic acid while the oleic acid was most common among unsaturated acids. On the basis of statistical evaluation for all individual fatty acids, it was evident that only the age of animals affect stearic acid content (it was higher in sheep fats than in lamb fats) as well as the myristic acid content (it was lower in sheep fats than in lamb fats). All the investigated animal fats (in contrast to vegetable fats and oils) contained also a notable amount of unidentified fatty acids. Color index of lamb fats was higher when compared with sheep fats. In all samples of lamb and sheep fats the absorption maximum in visible range of spectrum at the wavelength of 616-621 nm was evident, which was registered still only in beef tallow.
