The aim and research tasks in this paper are aimed at the risk assessment of different contaminants in the traditional production of Herzegovina ham. Risk assessment is done on the basis of testing the Herzegovina ham in the municipality of Nevesinje. The results showed that the production of ham is not standardized, which resulted in considerable variability in the quality of the tested samples on the sensory properties. Assessment process of traditional production of Herzegovina ham found that there is a risk in production unless you do not follow the prescribed norms of production and trade of this product.
