A feasibility of rabbit intestinal raw materials for producing original sausage products was determined. Comparative study of molding materials from rabbit intestinal raw materials and other species of farm animals was performed for chemical, structural-mechanical and technological values. The sizes, wall thickness, and strength of some portions of intestines are not uniform determining thereby the nature of processing and the aim of use. Molding materials from rabbit intestines in their strength characteristics are not competitive with natural membranes from other species of slaughter animals but meet the requirements of meat industry exceeding in the degree of stretching the similar materials of other species of farm animals. Materials from rabbit intestines have higher humidity permeability, farce capacity and heat shrinkable ability. It is proved that materials from rabbit intestines are advisable to use as edible membranes in view of small thickness and high protein content and low fat content for production of sausages and culinary products
