Results of selection of apple varieties with high juice output are presented. An evaluation of 105 varieties and 289 seedlings is done. The last ones are immune and highly resistant to scab hybrids and obtained from 1991 to 2009 as a result of step crossings. Antonovka Obyknovennaya was used as a control cultivar. The cultivars of practical interest with a juice yield above the control level (59.3-63.9%) are identified: Zaryanka, Orlovskoe Polosatoe, Pervij Salut, Proton, Osenje Aloje, Buninskoe, Olympjskoe, Pervenka, Vita, Sinap Orlovskij, Avgusta, Orlovskij Pioneer, Mezenka. This group includes such immune and highly resistant to scab cultivars like Bolotovskoe, Kurnakovskoe, Yubilyar, Svezhest, Zdorovje, Solnyshko, Imrus, Siroevskoe. It is found out that Rossoshanskoe Vkusnoe has the maximum yield of juice (73.9%). No clear direct relationship is revealed between chemical and processing properties of raw materials and a quality of juice. It is found out that the most prospective cultivars for juice production can be those with tasting juice as 4.2-4.5 assessment score according the 5-point scale.
