Experimental thermal drying of sunflower seeds (SS) of new high olein varieties and hybrids (the content of oleic acid 70-91%) was performed on an experimental stand unit simulating the drying process in direct-flow shaft driers. The thickness of a blowing layer is 100 milli meters, the rate of a drying agent is 3 m/s. As a criterion of the optimum heating temperature of SS was selected the inactivation degree of the effect of lipase and lipoxygenase. The activity of lipase in SS high oleic varieties and hybrids Kruiz, Kubanskij 941, Hermes, Favorite was much lower compared to linolic type SS. The linolic type seeds (Favorite, Flagman, Krasnodarskij 917) had the greatest lipoxygenase activity – 3.2-3.8 milli mole of active oxygen/kg. In the high oleic SS the activity of lipoxygenase was 2.0-2.5 times lower. The temperature optimum of lipase activity is in a range of 37-40 degrees C, therefore, the heating temperature of high oleic SS should not exceed 45 degrees, inasmuch as a more thermally resistant enzyme of lipoxygenase (optimum 45-51 degrees C) because of insufficient concentration of linolic acid is actually inactive. Fro SS of new linolic type varieties and hybrids (Favorite, Flagman, Krasnodarskij 917) thermal drying should be performed at a temperature of at least 55 degrees C
