In the conditions of the Republic of Belarus there were studied the theoretical aspects of potato (Solanum tuberosum) market formation. Potato made up a considerable part in the structure of people's food consumption and was of great social importance as an affordable foodstuff. Potato market as one of the most important food markets was examined. Special attention has been given to notion interpretation and classification indicators, peculiar to this market, and to the elements which determine the most important trends in the formation and functioning of the market. Potato production depended on fluctuating weather condition. The potato and products of its processing market was characterized by seasonality of potato production while the potato processing enterprises work all year long. The considerable part of consumers of potato market was concentrated in cities, and the agricultural population grows up a potato for personal needs on personal plots. Therefore the potato offer assumed participation of several intermediaries that leaded to loss of a part of the income of manufacturers. The potato and products of its processing market had a wide spectrum developed with use of potato of foodstuff (starch production, half-finished products, alcoholic drinks, etc.) That defined a high role of potato market in food maintenance of the country. The potato and products of its processing market was characterized by high elasticity, mobility, existence both large, and small manufacturers who were capable to react to varying market situation quickly.
