صينى. [目的]比较佛掌山药和铁棍山药主要营养成分,并对其营养价值进行评价。[方法]用常规方法测定佛掌山药和铁棒山药的干物质、矿物质、氨基酸、蛋白质、可溶性糖以及粗纤维含量。[结果]佛掌山药的干物质、磷和钾的含量分别比铁棍山药高7.0%、19.5%和26.0%,而铁棒山药铁、钙和锌的含量分别比佛掌山药高4.0%、7.8%和7.3%;佛掌山药的总氨基酸、必需氨基酸以及婴儿发育的必需氨基酸、蛋白质及可溶性糖的含量均高于铁棍山药,而粗纤维含量低于铁棍山药。[结论]佛掌山药的营养价值高于铁棍山药。_

[Objective]The main nutritional composition between two strains of Chinese yam_ (Dioscore opposite), Buddha palm yam (BPY) and iron rod yam (IRY), was analyzed and compared, and their nutritional value was assessed. [Method] The content of dry matter, mineral, amino acids, protein , soluble sugar, crude fiber of BPY and IRY were determined by normal determination methods. [Result] The dry matter content in BPY was 7.0% higher than that in IRY. the contents of phosphorus and potassium in BPY were 19.5% and 26.0% higher than that in IRY. There were no significant differences in contents of iron, zinc and cadmium between the two strains, and was 4.0%, 7.8% and 7.3% higher than BPY, respectively. Contents of total amino acids, required amino acids and required amino acids for baby development in BPY were significantly higher than that in IRY. Contents of protein and soluble sugar in BPY were higher than that in IRY, but crude fiber content in BPY was lower than that in IRY. [Conclusion] The nutritional value of BPY was higher than that of IRY.
