Evaluation and determination of fatty acids in high-yielding varieties of soybean collection for special uses.

Soybean is the dominant oilseed produced in the world.due to its favorable agronomic characteristics.its high quality protein and its valuable edible oil.So soybean is the main oil seed imports (nearly90%)in Iran and have the lowest tariff.Soybean oil is very valuable because of its nutritional characteristics,but it has low shelf life due to polyunsaturated fatty acid composition. Therefore hydrogenation is necessary.During hydrogenation high levels of trans fatty acids are formed which are serious risk for human.Now~there are soybeans wjth different fatty acid profiles and utilities.The main purpose of this project is fatty acid profile evaluation in soybean collection to determine their utilities.In order.! 00 lines and varieties were selected .After oil extraction and methylesterification by ISO 5508.5509 .fatty acid metylesters were analysed by gas chromatograph. The results showed that the samples had almost the same fatty acid profiles and were classified in low saturated fatty acid group The samples had average fatty acid contents: 11.5% palmitic acid .4.5% stearic acid, 23.2% oleic acid , 5~.s% linoleic. acid .and.7,6% linolenic acid, so their utilities are limited.
