The storage period of the Crimson Sweet water melon variety grown under Hungarian conditions can be increased from the usual 14-16 days to 42-49 days in refrigerated storage with a controlled environment. The storage conditions are: refrigeration within 48 h, storage at 7-8 C/degrees/ with 85-90 o/o relative humidity and an air composition of 2 o/o CO2 + 7 o/o O2 + 91 o/o N2. The proportion of marketable melons at the end of storage was at least 84 o/o, with a shrinkage value of 3-5 o/o. Few signs of cold sensitivity were observed. The external quality, flavour and smell of the melons can be preserved fairly well. The greatest and least favourable changes taking place during storage are in the surface colour (lightening factor)L and consistence of the edible melon flesh. A two-step technique was found suitable for the reduction of the surface germ number prior to storage: soaking in pure water at 55 C/degrees/ for 5 min., followed by 5-10 min. in 1 o/o chlorogen solution (benzol-sulphon-chloramine sodium). Changes in the internal quality are demonstrated by studies on enzyme activity (doubled, POD acitivity), viscosity, fine sugar composition (reduction in sweetness index from 1103 to 812) and aroma construction.
