The investigation was aimed at defining the kinetics of hop drying under the real conditions in the solar dryer. It was of a special interest to define the influence of the layer thickness on the drying rate as well as the changes in moisture content during the time. A model experiment was applied for the purpose of defining the influence of layer thickness on the drying rate in this solar dryer. The moisture content was measured on the following points: 25 cm, 55 cm and 85 cm of height above floor level in the dryer. The investigation has shown that the thick layers of hop are inadequate for this type of dryers. The best results were achieved with the layers of 55 cm. The change in moisture content within a layer was found to be sudden - resulting from changes in air within the layer. This conclusion is correlative to the former one and proves that the drying effect can not be improved by more thickening of dried material layer, since it requires longer drying which only degrades the quality of hop.
