Purpose of this research was to study the factors affecting palm-sugar production, using the stove in domestic palm-sugar industry and the appropriate model of the saving used in palm-sugar domestic industry. The data were collected by interview and observation of the farmers who had been the palm-sugar makers in Amphur Singhanakorn, Songkhla. Mean, percentage and ANOVA were used to analyse the data. The results of this study were: 1. Generally the factors of palm-sugar making of the farmers were different: the tenure of the sugar-palm trees, numbers of sugar-palm trees from which sugar is obtained per day, an amount of sugar palm juice per day, an amount of firewood used, the need for growing firewood plants, an amount of time used in making sugar. Whereas, numbers of labourers and enthusiasm in sugar making were not different. However, all the factors and procedures in sugar making were still subsistence production methods. 2. Types and percentages of stoves used by the farmers were: 2.1 the traditional one-pan stove without ventilation controller (82.1 %). 2.2 the adapted one-pan stove with ventilation controller (10.8 %). 2.3 the adapted two-pan stove with ventilation controller (7.1 %). 3. The most appropriate and effective model of stove which fitted the factors for palm sugar making was the adapted one pan stove with ventilation controller.
