Three Wall Street analysts predict the condition of the foodservice industry in the 1980's. Carl DiBiase of Sanford C. Berstein sees the aging population as the most important factor leading to growth in varied menu operations such as coffee shops and variety dinner houses; Chinese fast food should become popular. Consolidation of companies will not be excessive, since foodservice is change- and people-oriented. Bob Emerson of Solomon Brothers sees increased competition for fast food chains from regional operations, especially in pizza, donut shops and hamburger chains. Chains with fast service and wine and beer are predicted to succeed. Mike Esposito of Bache, Halsey, Stuart, Shields, Inc. predicts a refined marketing approach will be required but that market growth will continue.
