The opportunities for, and limitations to value-adding to tomatoes and mangoes are discussed. The report identifies the risks involved in production, including low-priced export markets, low-priced imports and high tariffs on our exports into developed countries. It identifies the costs of raw materials and packaging materials as major costs of production, followed by labour and freight. The report states that the easiest and least risky way of expanding the fruit and vegetable processing industry is through existing large scale processors, and estimates that a 15 000 000 dollar capital input would be needed to establish a factory capable of processing 15 tonnes of raw material per hour. It concludes that costs of production need to be reduced if Australia is to compete against America, Italy, Thailand, India and Mexico on both the domestic and international markets.
