The paper presents results of 5 years of experiments on maturing of 7 grass species. The following parameters were determined: chlorophyll content in flag leaf blades, water content in leaf blades and seeds as well as water, simple sugars and starch concentration in seeds. Moreover, an attempt was made to define the level of grain losses caused by improper timing of the harvest. Although both chlorophyll concentration and water content in leaves undergo distinct and characteristic, for individual grass species, changes during maturing process, they strongly depend on weather changes. Therefore they cannot be relied on as primary indicators in establishing the best time for harvesting seed plantations. On the other hand, water and sugars contents in seeds turned out to be good and reliable indicators of seed maturity. Generally speaking, seed grasses should be harvested when water content in seeds ranges from 35 to 40 per cent with exception of Poa pratensis which be harvested at water content 30 per cent. Sugars concentration should not exceed 5 per cent in dry matter.
