The proteins of Glycine max L. secreted from seeds at various stages of germination have been studied by differential adiabatic scanning microcalorimetry (DASM). The existence of a special conformational state for the 11S storage protein was first detected in the storing state of the seed which is distinguished by thermodynamic parameters from the protein in the imbibed state of the seed. This state detected only upon direct extraction of the total protein by a salt buffer. During seed germination the storage protein undergoes the same conformational rearrangements that are well controlled by DASM. Three consecutive states of the protein were revealed during germination; the last two of those seem to characterize the mechanism of enzymatic mobilization of glycinin.
