The quantitative analysis of volatile fatty acids in the colon contents of rabbits, swine, cattle, sheep and broilers was made by gas chromatography; antibacterial effect on E. coli was tested in vitro. The mean content of volatile fatty acids - acetic-, propionic- and butyric acid - in healthy animals tested amounts to 68-128 mmol/kg. pH values of the colon contents were found to be 5.8 to 7.2. The antibacterial effect was demonstrated in all 5 animal species at pH 6. The antibacterial effect produced by the non-dissociated volatile fatty acid molecules, ceased by increasing the pH of colon contents to value 7. At pH 6 the proportion of the non-dissociated molecules amounts to 6 per cent; at pH 7 this proportion is smaller than 1 per cent. The antibacterial effect showed the same intensity in all 5 animal species; this system of defense contribute to controlling enteric infections of bacterial origin.
