Since the juice extracted from Helianthus tuberosus tubers contains 3-6 % ash, 2 % of which is formed by K, it was found necessary to develop a mild technology not based on ion-exchange but ensuring the retention in the juice rich in fructose of ash components important according to nutrition physiology. To hydrolyze the inulin content of Helianthus tubers, experiments were carried out with two enzyme preparations: Inulinase (NOVO) and RohalaseI (Rohm). A degree of hydrolysis 90.8 and 86.9 %, resp., was achieved. The analysis of the chemical composition of the Helianthus juice concentrate rich in fructose has proven the retention of high macro- and micro-element proportion of the ash, while by application of the ion-exchange technology the macro-elements to a higher degree, and the micro-elements to a lesser degree, were lost.
