Samples of sliced eggplants (hybrids and lines) were immersed in a solution containing 0.35% K metabisulfite and 0.2% citric acid, with the aim of preventing the browning phenomena during both the preparation of the samples and the frozen storage period. After storing for 12 months at deg C no appreciable modifications had appeared on the organoleptic characteristics of the product, while the untreated samples showed browning of different intensities. The hybrids 205/76-202/76, the MF 74 and MS 75 were judged suitable for freezing while the qualitative characteristics of the hybrid 110-74 were inferior to the other samples that were tested.

Dopo 12 mesi di conservazione a -20 non sono state rilevate apprezzabili modificazioni delle caratteristiche organolettiche dei prodotti, mentre nei campioni non trattati sono stati rilevati imbrunimenti di diversa intensita. Gli ibridi 205/76-202/76, le linee MF 74 e MS 75 sono risultate inferiori a quelle degli altri campioni presi in esame.
