Pummelo (Citrus grandis Osbeck.) cv. Kao Thongdee harvested at two maturity stages, 6.5 and 7.5 months after full bloom, were stored at room temperature in close containers having air with 54 or 89 % relative humidity flow through continuously. Soluble solids content (SS) of the 6.5 month old fruits increased with time of storage but no change occurred in the 7.5 month old fruits. At the lower relative humidity (RH) water loss from pummelos was about 5 folds greater than that at higher relative humidity condition. Although the rate of water loss was different, there was no effect on the soluble solids content during the first 4 weeks of storage. However, after 6 weeks of storage pummelos which had higher rate of water loss had 1 % higher SS content. At the beginning of the storage, the 6.5 month old fruits had higher titratable acidity (TA) than that of 7.5 month old fruits. The TA decreased with time of storage particularly in the 6.5 month old fruits. Water loss had no effect on TA in the 7.5 month old fruits but it reduced the decrease in TA of the 6.5 month old fruits by 0.2 % after 6 weeks of storage. Soluble solids to acids ratio in the 7.5 month old fruits was higher than the 6.5 month old fruits at the beginning of the storage. After storage this ratio increased particularly in the 6.5 month old fruits stored under high relative humidity condition. Increasing the sweetness of pummelos after harvest was caused by the decrease in TA. Water loss, although associated with the increase in concentrations of both SS and TA, did not affect the sweetness of the fruits.
