Data E.S. | Davis N.P.
Among the 12 recommended varieties studied, PSPSH14 showed the least weight loss (19.32 percent), the degree of shrivelling (1.15) and decay (1.11) but had the highest degree of sprouting (3.28) after 3 months of storage. VSP1 had the highest weight loss (46.72 percent). VSP 7 did not sprout at all during the duration of storage. VSP 5 (34.53 percent), BPISp-2 (9.97 percent), UPLSp-1 (84.52 percent), and both VSP 1 and VSP 2 (3.99 percent) gave the highest dry matter, sugar, and protein content, respectively. No specific trend was observed in changes in percent dry matter during storage. Sugar content increased with a corresponding decrease in starch content. Steamed VSP 2 had the highest general acceptability score based on the 9 point hedonic scores: UPLSp-3 had the least. All the varieties had an acceptable score of 5 or better when stored for 3 months except BPISp-2.
