Results are given of studying the intensification of technological processes of diluting the batches and obtaining the wort of the distilling production while processing raw materials of various kinds using high effective enzyme preparations of different origin. Molasse distilleries stated to start producing alcohol from starch-containing raw material in short terms without significant material inputs. In addition, in a case like that there is a possibility to come to alcohol production from molasses or grain depending on the market conditions. The renovated distillery produces 2,500 dal of the first class alcohol per day which organoleptic mark, while carrying out testing thereof, was 9.85 scores. The technology introduced allows preparing the spirituous mash without an excessive increase in the acidity and additional antiseptic agents. Savings of energy resources due to introducing a low-temperature thermal and enzymatic processing of the raw material is about 15 kg of steam per dal of alcohol.
