High-pressure extraction of the raw rapeseed lecithin by means of CO2 was studied. The kinetics was studied under a pressure of 30 MPa and under temperatures of 40 and 61 degrees C. Two types of extractions were compared from the view point of water evaporation from gums. High-pressure extraction by means of CO2 was considerably dependent on the hydrodynamics of this process. Hydrodynamical features of extracted raw lecithin are important for the project of reactor design or for decisions on providing a suitable plant. Mixture of gases under the above-mentioned critical pressure can improve the course of the extraction of the raw lecithin from the view-point of reducing the lecithin viscosity. This reduced lecithin viscosity is important mainly at the end of extraction with a lowered content of oil in the material. The solubility of rape-seed oil in CO2 was 0.7-1.0 per cent in the beginning of the extraction in the extractor under the following conditions: temperatures 40 and 61 degrees C, pressure 30 MPa, while keeping a higher content of oil in the raw materials. These data are significant if a pilot plant or production-scale operation are to be projected. The raw lecithin obtained in this way has a darker colour and contains more odour substances. Unsuitable organoleptic properties are decreased during this extraction, which is a positive feature. The residual content of water had a negative influence on the oil extraction and on its transfer to the expander. The water contained in the raw lecithin entracted also a great number of phospholipides, which reduced the yield of this extraction. A light brown product of solid consistence was obtained from both the laboratory and plant evaporated gums. This product was comparable with other commercial phospholipidic concentrates that are used in chocolate factories, owing to its content of phosphorus and the residual content of oil.
