ITALIANO: [Immediatamente dopo la raccolta (giorno 0), 2 varieta' di lattuga (burro e crespa) sono state pesate e conservate al freddo a 1 gradi C con 3 metodi: raffreddamento ad acqua, aria condizionata umidificata o stanze fredde convenzionali, per tre giorni. Sono poi state portate a 20 gradi C dal 3 al 4 giorno poi ricongelate a 1 grado C in una stanza fredda convenzionale fino al 7 giorno. La perdita di peso e il contenuto di vitamina C e -carotene sono stati misurati il 4 e 7 giorno. La lattuga conservata ad alta umidita' ha perso molto piu' peso che con gli altri 2 metodi, ma il carotene si e' conservato meglio con questo metodo e con il raffreddamento ad acqua. Questo si e' rivelato vero anche al 7 giorno per la vitamina C nella lattuga burro, ma la refrigerazione convenzionale ha mantenuto meglio la vitamina C nella lattuga crespa].
اظهر المزيد [+] اقل [-]إنجليزي. Immediately after harvest (day 0), 2 varieties of lettuce (butterhead and webb) were weighted and placed in cold storage at 1 deg. C using one of 3 methods: hydrocooling, humified forced air, or a conventional cold room, for 3 days. They were then brought to 20 deg. C from day 3 to day 4, then rechilled to 1 deg. C in a conventional cold room till day 7. The weight loss and contents of vitamin C and -carotene were measured on days 4 and 7. Lettuces kept in high humidity storage lost more weight than with the other 2 methods, but the -carotene was better conserved with this method and with hydrocooling. This was also true on day 7 for vitamin C in the butterhead lettuce, but conventional refrigeration better retained the vitamin C in the webb lettuce.
