In the present study were followed trends in total meat production and the production of pigs for slaughter by categories in different periods and the quality of pigs from the farms and individual producers in different cyclical periods in Serbia. Since 1991 the total meat production in Serbia has been declining steadily. However, pork production is maintained at approximately the same level so that the share of pork in total meat production increased to over 60%. Ratio of the number of slaughtered pigs fleshy and fat in the total number of pigs in the test periods was no significantly changed, but in recent years the number of pigs slaughtered in abattoirs of fat on the rise. The average weight of pigs prior to slaughter from the breeding farm was 102.87 kg, and pigs from the purchase of 113.78 kg. The highest average weight after the troops had slaughtered pigs from the purchase, and barrows from the farms, a minimum hull weight of gilts had a farm. Slaughtering of pigs and pig farm from the purchase was not significantly different. The percentage of meat in the carcasses of farm pigs over 50% was found in 71.36% of carcasses and the pig carcasses from the purchase with a percentage share of meat more than 50% was 38.56%. More than half (50.28%) farm pigs classified on the basis of meatiness in the class, while the pigs from the pig purchase most of the class R (47.92%). Examining the impact of meatiness on the economic effects it was found that the difference between the meatiness of pigs from farms is up to four percentage points, while best indexes the meatiness of pigs from farms and purchase the difference is eight percentage points. Analysis of the meatiness of pigs from different farms in different production parties (summer, winter) shows that the carcass lean manufacturing various parties equal. Carcass lean gilts were significantly higher than castrates meatiness from the same farm.
