Antioxidant and antimicrobial properties of various herb extracts are of great interest in both fundamental science and food industry. Natural extracts from medicinal and spice herbs have been used like decontaminants of meat and preservatives of meat products. Instead they help them retain their color, texture flavor and nutritional value. Most natural additives have been approved for food and beverage consumption. Raw meat can be easily contaminated by microorganisms and support the growth of pathogens, leading to serious food-borne illness. They are added to various products to retard their spoilage.
