Given the importance of knowing the factors that influence the quality and oxidative state of edible oils, the aim of this study was to investigate the effect of various content of hull and impurities in the seed on quality, ie. oxidation state of cold-pressed sunflower oils. The experiments involved cold-pressed sunflower seed oils of high oleic hybrid NS-H-6326 containing oleic acid in amount of 83.32%. Cold-pressed oils are produced by pressing the screw press prepared materials with different hull and impurity content. It was founded; the presence of hull and impurities has a different influence on the quality and oxidative stability of fresh oil samples.
