Food scheme (regarding the meat of freshwater fish represent the content of zinc in single commodities of meat. These contents can by modified by influence of the environment. The goal of this work is specifying the context on zinc in the meat and comparing these to the data set in the scheme. Analyses of specifying in the meat of freshwater fish were done. Laboratory assignments were performed by the GAAS method in the tissues (meat) of the following samples: carp (Cyprinus carpio L.), crucian carp (Carassius carassius L.), tench (Tinea tinca L.), perch (Perca fluviatis L.), bream (Abramis brama L.), roach (Rutilus rutilus L.), european caffish (Wels) (Silurus glanis L.), rainbow trout (Oncorhynchus mikkis (Walbaum) syn. Salmo gairdneri (Richardson)), northern pike (Exox lucius L.), european eel (Anguilla anguilla L.) and european pike (Sander lucioperka L.). The zinc data those being detected in all types were higher than the average food (scheme) data. The presence of zinc in the environment is on the increase. It is necessary to pay constant attention to it; one of the reasons is food quality. The other reason is that zinc is not only essential for people as well as animals, but also toxic for them. It is necessary to constantly compare the data set in the schemes with the factual data.
