إنجليزي. In this study, some physical and mechanical properties of walnut (Juglans regia L.) varieties (Bilecik, Yalova-1, Yalova-3), were investigated as a function of moisture content. The experiments were conducted at three moisture content. The moisture contents were explained for walnut shellled fruits in the range of (%10,87; %17,73 and %19,41) for Bilecik; (%12,95; %18,06 ve %30,19) for Yalova-1 and (%12,67, %17,94 and %24,19) for Yalova-3. The mean size dimension (length, width and thickness), geometric mean diameter, sphericity, surface area, bulk and true densities, single fruit volume, porosity and coefficient friction values were determined as physical properties.

Bu çalışmada, ceviz (Juglans regia L.) çeşitlerinin (Bilecik, Yalova-1, Yalova-3), bazı fiziksel ve mekanik özellikleri, nem içeriğinin bir fonksiyonu olarak belirlenmiştir. Denemeler üç farklı nem içeriğinde yürütülmüştür. Ceviz kabuklu cevizi için nem içerikleri olarak Bilecik çeşidinde (%10,87; %17,73 ve %19,41); Yalova-1 (%12,95; %18,06 ve %30,19); Yalova-3 (%12,67, %17,94 ve %24,19) esas alınmıştır. Fiziksel özellikler olarak boyutsal dağılım geometrik ortalama çap, küresellik, yüzey alanı, porozite, yığın ve tane hacim ağırlıkları, meyve hacmi ve sürtünme katsayısı değerleri incelenmiştir.
