إنجليزي. In this research, carotenoid profile and antioxidant activity of carrot cultivars obtained from three different locations (Ankara, Burdur, Konya) in Turkey were determined during two years. In addition, the changes in carotenoids, antioxidant activity and vitamin A content of carrots during 6 months of cold storage (0 °C, 85_90 % RH) were also investigated.

Bu araştırmada, Türkiye'de 3 farklı yöreden (Ankara, Burdur, Konya) 2 yıl süre ile temin edilen havuç çeşitlerinde karotenoid madde dağılımı ve antioksidan aktivite belirlenmiştir. Buna ilaveten, 6 ay soğukta depolama süresince (0 °C, 85_90 % RH) havuçtaki karotenoidler, antioksidan aktivite ve A vitamini içeriğindeki değişimler incelenmiştir.
