The targets of this monograph are to analyze the currently developing innovative packaging technologies in food industry and to introduce consumers with experimentally obtained results at the Faculty of Food Technology of Latvia University of Agriculture using the new packaging technologies, active packaging elements and environmentally friendly food packaging materials. Accordingly to the target the content of monograph is outlined in seven chapters: 1. Characterization of packaging materials; 2. Active and intelligent (smart) packing; 3. The latest trends in packaging technologies of minimally processed fruits and vegetables; 4. High risk food products in sous vide packaging; 5. Biologically degradable materials – the latest trends in food packing; 6. European Union legislative acts as regards on active and intelligent packing. 7. Shelf life modelling. The monograph is foreseen as informative source for students and it will offer knowledge to producers concerning innovative food packaging technologies and their implementation for shelf life extension and quality retention.
