The monograph comprises information on research carried out in Latvia and world-wide dealing with biologically active compounds in raw materials and foods as well as their changes in processing. The majority of research results on biologically active substances and their changes in storage and processing described in the monograph is obtained by researchers of Latvia University of Agriculture (2000-2012). The monograph includes eight chapters: • Chapter 1, Vitamins, presents general description of vitamins paying a special attention to their chemical structure, role in human body and stability in foods. • Chapter 2, Carotenoids, provides brief description of carotenoids and information on total carotene content in carrots and rowanberries. • Chapter 3, Prebiotics and probiotics, summarizes current research results on the functional food products provided in Latvia, analysing probiotics and prebiotics, their interaction in food systems. • Chapter 4, Proteins, outlines the information about proteins structure, functions, importance in a diet and content in different food products. • Chapter 5, Dietary fibre, deals with information on fibre definition and stages of its development, description of fibre types and their chemical composition. • Chapter 6, Phenolic compounds, focuses on phenol structure characterization, importance in plants physiology, human body, and also influence on the quality and properties of different food. • Chapter 7, Volatile compounds, describes volatile compounds structure, importance in plant physiology and food quality assessment. • Chapter 8, Food from social sciences viewpoint, analyses researches on the role and perception of food from the perspective of social sciences or from the viewpoint of consumers, beginning with decision making and ending with their implementation and evaluation.
