Winter wheat (Triticum aestivum L.) is a crop of worldwide importance as well as in Latvia. Grain quality adversely affects price and consumer acceptance of finished products. Field experiments with winter wheat cultivars ‘Bussard’ and ‘Zentos’ were conducted at the Latvia University of Agriculture, Training and Research Farm Peterlauki in 2009/2010 and 2010/2011. The aim of this investigation was to identify the variation of protein content and Zeleny sedimentation value depending on cultivar, different rates of nitrogen fertilizers (N) applied (N60, N90, N120, N150), weather conditions on fresh and stored grain (60, 120 and 360 days). Highly significant effect of cultivars, nitrogen fertilizer and meteorological conditions influenced the protein content and sedimentation value. The cultivar ‘Bussard’ had higher protein and sedimentation value than those of ‘Zentos’. During the initial 360 days of grain storage variation in the protein content was inconsistent, the sedimentation values decreased for cultivar ‘Bussard’ 8 – 14 cm**3, and by cultivar ‘Zentos‘ 6 – 11 cm**3. Close positive correlation was determined between the protein content and sedimentation value obtained only for cultivar ‘Zentos’.
