Effect of jasmine-essential oil encapsulated in modified starch on the survival of Staphylococcus aureus inoculated in Lookchup

Objective of this research was to investigate the combined effects of microencapsulation technique and jasmine-essential oil on the survival of Staphylococcus aureus inoculated in lookchup. The results showed that as the concentration of essential oil increased, the number of S. aureus decreased (p LT=0.05). The amount of S. aureus decreased by 33.52-100 percent when the concentrations of essential oil of 20-32 mg/ml were used. Since the MICs of S. aureus was 32 mg/ml, the concentration of jasmine-essential oil at 32 mg/ml was selected for producing microcapsules with the ratio of essential oil and modified starch of 10:90, 20:80 and 30:70. The results indicated that storage time had significant effect on quality of lookchup inoculated with 6.51 log cfu of S. aureus/g (p LT= 0.05). Regardless of essential oil and modified starch ratios, the amount of S. aureus in lookchup reduced in 3 days at 4+-2 deg C and 2 days at 30+-2 deg C. Later, the number of S. aureus in lookchup encapsulated at the ratio of 10:90, 20:80 and 30:70 increased and became closed to that of the initial microbial concentration after storage for 12, 15, 21 days, respectively at 4+-2 deg C and 6, 8, 10 days, respectively at 30+-2 deg C.
