In the conditions of the Republic of Belarus there were presented the results of studying of ways of use of potato (Solanum tuberosum) varieties. In course of the study there were analysed morphological parameters of potato tuber (tuber surface character; shape index; number of eyes, eye depth); biochemical indices of potatoes (starch, total protein, Vitamin C, reducing sugars, nitrates); phytonutrients content in potato tubers (starch, protein, Vitamin C); technological parameters of potato tubers (the amount of waste during cleaning; resistance to browning flesh). Also there was presented a rating of tubers for ability to processing to potato products after harvest; assessment of tubers processing efficiency during storage. Quality indicators starch tubers were analysed. Research results showed that varieties Zoratchka, Volat, Gostinets, Manifest, Spadtchyna, Lad, Vektar are recommended for table use. Falvarak, Darnica, Charaunik, Maximum are recommended as a table potato varieties suitable for processing for potato foods.
