The article presents information on the action of different carbon (glucose, saccharose, fructose, mannose, molasses, and ethanol) and nitrogen (ammonium sulfate and ammonium phosphate dibasic) sources on the accumulation of biomass, biosynthesis of carbohydrates and mannanes in the Saccharomyces cerevisiae CNMN-Y-18 yeast strain. This study has demonstrated feasibility of supplementation of the YPD nutritive medium with glucose and ammonium phosphate dibasic at concentrations of 3 to 5% and 0.1 to 0.4 %, respectively.
