Biochemical composition of Jerusalem artichoke tubers from the collection of the Central Botanical Garden of the National Academy of Sciences of Belarus

В результате сравнительного исследования биохимического состава подземных органов 10 сортов топинамбура из коллекции ЦБС НАН Беларуси в осенний и весенний периоды установлена выраженная зависимость интегрального уровня питательной и витаминной ценности сырьевых частей данного вида по совокупности 8 определявшихся признаков от сортовой принадлежности растений и времени заготовки клубней. Показано, что независимо от времени года наиболее высокой питательной и витаминной ценностью характеризуются подземные органы сортов Скороспелка и Топинсолнечник, что свидетельствует о их наибольшей перспективности для промышленного культивирования в условиях Беларуси.

إنجليزي. Jerusalem artichoke appears one of the most perspective cultivars in the Republic of Belarus used in food, feed and medicinal industries. Due to high content of inulin, widely used in diabetes mellitus treatment, underground tubers of Jerusalem artichoke represents a valuable medicinal cultivar. A comparative study of the biochemical composition of the underground bodies of 10 varieties of Jerusalem artichoke from the collection of Central Botanical Garden of the National Academy of Sciences of Belarus has been carried out in the article. Evaluation of the plants in the autumn and spring periods pronounced the dependence of the integral level of nutritional and vitamin value of raw pieces of this plant, evaluated according 8 defining characteristics, on variety and harvesting time. it has been shown that regardless of the time of year, the highest level of integrated nutritional and vitamin value of underground bodies of Jerusalem artichoke are characterized by the variety. The most efficient varieties are Skorospelka and Topinsolnechnik, indicating that they are the most promising for commercial cultivation in the conditions of the Republic of Belarus.
