Evaluation of Quality Characteristics of Rice to Select Suitable Cultivars for Sediment

he purpose of this study was to evaluate the effects of rice cultivars (Baekogchal, Dodamssal, Goami4, Saemimyeon, Samkwang, and Seolgaeng) on the quality characteristics of rice sediment. For amylose content, Goami4, Saemimyeon and Dodamssal showed high contents, and Baekogchal had the lowest content of 6.19%. Samkwang was had the highest water-binding capacity at 137.45%, and Goami4 had the highest amylose cultivar at 131.87%. Water content of rice sediment was 59.45∼66.80% with a pH of 6.59∼6.94. Saemimyeon and Dodamssal tended to have lower brightness than other cultivars. For hardness, high-amylose cultivars tended to be harder, and Goami4 had the highest hardness and gumminess. For pasting characteristics, Goami4 from raw rice had high setback viscosity, whereas Samkwang had the highest value out of the materials used for sediment. The use of dried powder after starch gelatinization could enable sediment manufacturing with the main materials being rice. Goami4 out of all high-amylose cultivars turned out to be the most appropriate.
