A mathematical model to predict the timing of safe storage and shelf life of wheat bread flour | Математическая модель прогнозирования сроков безопасного хранения и годности пшеничной хлебопекарной муки

إنجليزي. Normative documents determine that the shelf life (SL) and the conditions for storage of food products are established by the manufacturer of the product. This complicates the work of flour mills. An instrumental method has been developed for determining the standards for storage and shelf life of flour based on the value of the acid fat number (AFN), i. e. the content of free fatty acids. The AFN values were determined under different temperature and humidity conditions characteristic of different regions of the RF. A mathematical model has been developed that allows predicting the safe storage period (SSP) and the SL of wheat flour. The studies were carried out over a wide range of storage temperatures (from 29.9 deg. C to –11.1 deg. C), the moisture content of the flour (9.7–16.3%) and the relative humidity (53–89%) for 25–68 months. The changes in the AFN are processed in the form of 2-nd degree polynomial equations. With the increase in the storage time, after achieving the standards of the AFN for safe storage, the rate of change of the AFN decreases. To predict the SSP, a regression equation is obtained that takes into account the change in the initial value of the AFN, the storage temperature and moisture content of the flour, and the relative humidity of the air. According to the results of the complex organoleptic evaluation of flour and bread, SSP and SL of the flour are determined, and a relationship is established between them, depending on the parameters of the storage process. Using these ratios, a regression equation was obtained to predict the SL of wheat flour. The standard values of AFN for safe storage and SL of flour – 50+-5 and 80+-8 mg KOH per 1 g fat, respectively were determined. The obtained ratios were used for the development of the Guidelines for determining the safe storage period and shelf life of wheat flour.

الروسية. Нормативными документами определено, что срок годности (СГ) и условия хранения пищевых продуктов устанавливает изготовитель продукции. Это осложняет работу мукомольных предприятий. Разработан инструментальный метод определения норм хранения и годности муки по значению кислотного числа жира (КЧЖ), т. е. содержанию свободных жирных кислот. Определяли значения КЧЖ при различных температурно-влажностных условиях, характерных для различных регионов РФ. Разработана математическая модель, позволяющая прогнозировать срок безопасного хранения (СБП) и СГ пшеничной муки. Исследования проводили в широких диапазонах температур хранения (от 29,9 до –11,1 град. C), влажности муки (9,7–16,3%) и относительной влажности воздуха (53–89%) в течение 25–68 мес. Изменения КЧЖ обработаны в виде полиномиальных уравнений 2-ой степени. C увеличением продолжительности хранения, после достижения нормативов КЧЖ для безопасного хранения, скорость изменения КЧЖ уменьшается. Для прогнозирования СБП получено уравнение регрессии, учитывающее изменение начального значения КЧЖ, температуры хранения и влажности муки, а также относительной влажности воздуха. По результатам комплексной органолептической оценки муки и хлеба определены СБП и СГ муки, и установлена связь между ними, зависящая от параметров процесса хранения. С использованием этих соотношений получено уравнение регрессии для прогнозирования СГ пшеничной муки. Определены значения нормативов КЧЖ для безопасного хранения и годности муки - 50+-5 и 80+-8 мг КОН на 1 г жира соответственно. Полученные соотношения использованы для разработки "Руководства по определению сроков безопасного хранения и годности пшеничной муки".
