إنجليزي. Potatoes are harvested in autumn and stored for use throughout the year. In this way, Mills uses fresh potatoes in potato salad throughout the year. After customer complaints about hard potato cubes in potato salad, Mills has initiated to study if the potatoes change during the storage time. This thesis continues the work of Mills. In the thesis two different potato salads are studied, both of which are based on mayonnaise but one also contains creme fraiche and leek. To assess the development of the firmness of the potato cubes, the texture was measured throughout the shelf life of the potato salad, which is 8 weeks. The potatoes were used in potato salad 4 weeks after harvest, and after 10 weeks and 14 weeks of storage. The results show that firmness increased during the shelf life of the salads made in both October, November and January. There was a difference in the firmness of the two products. Most of the analyzed potato cubes were firmest in November.One way to reduce the occurrence of hard potato cubes may be cooking in different salts and salt content in the boiling water. Therefore, three types of salt were tested in three different concentrations in the boiling water for the potato cubes. The types of salt used were NaCl, which is also used in commercial production, KCl and CaCl2. The concentrations used were 0%, 0.7% and 1.5%, and they were determined by reference from commercial potato salad production. The use of KCl resulted in less firm potato cubes compared to the reference sample from the factory, using this type of salt can be a way to avoid hard cubes. Cooking with 0.7% CaCl2 gave the firmest potato cubes, and a film was formed around the piece so that the mayonnaise base in the potato salad only coated the cubes. In addition, the use of CaCl2 affected the taste negatively.

Poteter blir høstet om høsten og lagret slik at de kan brukes hele året. Mills bruker på denne måten ferske poteter i potetsalat hele året. Etter kundeklager på for harde potetbiter i potetsalat har Mills begynt arbeidet med å studere om potetene endres gjennom lagringssesongen. Denne oppgaven viderefører arbeidet til Mills. I oppgaven ses det på to ulike potetsalater hvor begge er basert på majones men den ene inneholder i tillegg creme fraiche og purre. For å vurdere utvikling av fastheten til potetbitene ble teksturen målt gjennom hele holdbarhetsperioden til potetsalaten som er 8 uker. Potetene ble brukt i potetsalat 4 uker etter høsting, og etter 10 uker og 14 ukers lagring. Resultatene viser at fastheten økte i løpet av holdbarhetsperioden for uttakene gjort både i oktober, november og januar. Det var tydelig forskjell i utviklingen i fasthet hos de to produktene. De fleste målte potetbitene var mest harde i november.En måte å redusere forekomst av harde potetbiter kan være ved koking i ulike salter og saltinnhold i kokevannet. Derfor ble det gjort forsøk med tre typer salt i tre forskjellige konsentrasjoner i kokevannet til potetbitene. Typene salt som ble brukt var NaCl, som også brukes i kommersiell produksjon, KCl og CaCl2. Konsentrasjonene som ble brukt var 0 %, 0,7 % og 1,5 %, og ble bestemt etter referanse fra kommersiell produksjon av potetsalat. Bruk av KCl ga mindre faste potetbiter enn referanseprøven fra fabrikken, bruk av dette kan være en måte å unngå for faste biter på.
