According to vegetable oil consumption, rapeseed (Brassica napus L.) is the third-leading source of edible oil afterpalm and soybean. Its oil is used as food, feed and for biodiesel production. Great market demands led to significantincrease in cultivation areas, yield and quality of rapeseed worldwide. Mendelian rules represent basics of all cultivarand hybrid breeding methods in oil and forage crucifers. Lines are tested over several years on different localities withmain breeding aim for seed and oil yield increase and improvement in seed quality. Seeds of high-quality rapeseed cultivars have around 45% oil with 60% of oleic acid and 23% protein. So far, different quality varieties have been bred suchas canola and high oleic type of rapeseed. Most significant anti-nutritive substances of oilseed rape are glucosinolates.Significant progress has been made by applying modern biotechnology methods in breeding. During three decadesof rapeseed breeding programs at Institute of Field and Vegetable Crops Novi Sad 13 winter rapeseed cultivars, twospring rapeseed cultivars, and three winter hybrids have been developed.
