Use of polymeric membranes in wine processing in technological processes.

The paper discusses the use of test polymer membranes with different pore sizes (0.2 μm, 0.45 μm, 0.8 μm) of acetyl cellulose mixed ethers to filter wine. The steps for obtaining membranes by the phase inversion method are given. The surface topography, productivity and pore dimensions of the obtained membrane samples are studied. In the first stage, in order to remove the large particles, the colloidal aggregates from the wine, pre- processing of the wine was carried out on deep type filters with a pore size of 10 μm. The next step was to filter the wine on filters of membrane samples of different sizes and it was found that using the obtained membranes, the initial opacity of the wine decreases from 20.35 NTU to 0.26 NTU when filtered on a 0.2 μm membrane, and when filtering on 0.45 μm and 0.8 μm membranes from 20.35 NTU to 0.30 NTU and from 20.35 NTU to 0.30 NTU, respectively. Yeast, mold, lactose, vinegar, and coliforms were not found in the filtered wine samples which were filtered on 0.2 μm and 0.45 μm porous size membranes. Fig. 1, Ref. 5.
