Fat metabolism in ruminants differs from that of monograstric species. This paper describes the metabolism of free fatty acids, cholesterol, triglycerides and lipoproteins and their interrelationship. Knowledge of fat metabolism is of great importance, because the complex of the most common diseases in dairy cows in the form of insulin resistance, ketosis and fatty liver is directly related to fat metabolism. Also, the determination of the concentration of non - esterified fatty acids and ketones is the most important aspect of health assessment in cows in different lactation periods.
