The composition of some lipid fractions (phospholipids, triglycerides, free fatty acids, sterols) of wild growing edible mushrooms

Mushroom samples were collected from various habitats around Belgrade (Yugoslavia) and they belonged to different families (Coprinaceae, Agaricaceae, Boletaceae, Russulaceae). The lipid contents in the investigated samples made 8 to 13% of dry matter, except species Boletus with somewhat lower lipid content. The fatty acid quality composition of the investigated species was the same, but the ratio among them varied depending on the botanic affiliation of a mushroom. The total lipids had a high phospholipide (13.2-45.1%) and sterol content (16-31%). Triglyceride content varied from 18.6 to 50.8% and that of free fatty acids from 5 to 13.8%. Certain sterols were identified as well in the lipids of the investigated species.
