Mechanical characteristics of the basic parts of potato tubers

A penetration body in the shape of cylinder with a flat face was used for a penetration test when mechanical properties of the basic parts of potato tuber (flesh, medial parenchyma, side) were investigated in 16 varieties of potatoes in the course of three-year measurements. The mechanical characteristics of the basic parts of tubers in different potato varieties were found to have the relatively constant values of penetration strength and specific deformation force, the modulus of elasticity being rather variable. The resistance of tubers to mechanical injury decreases with the increasing content of dry matter in the tubers and with the increasing content of fibre in the parenchyma of tuber sides. A decrease in resistance to mechanical injury is also influenced by the growing penetration strength and modulus of elasticity of medial parenchyma, or of parenchyma of tuber sides, and a decrease in the depth of penetration both into flesh and medial parenchyma. It was found that the traditional interpretation of results of impact tests using a rebound pendulum brought about false conclusions about the resistance of potato varieties to mechanical injury.
