إنجليزي. During 1989 and 1990 vintages, the effects of hyperoxidation of musts of cv. Lambrusco a foglia frastagliata (highly pigmented red grape) were investigated as for a flowchart for white wines. Oxygen causes a decrease of the total polyphenols comparable to that obtained with a treatment with 210 g charcoal/hL. Hyperoxidation induces much higher losses in anthocyanins content than the ones obtained in decolorizing treatments where charcoal is employed within legal limits. The "hyperoxidated" wines have, in some cases, better preference ratings than "test" wines or no significant flavour difference can be noticed

Nel corso delle vendemmie 1989 e 1990 sono stati studiati gli effetti dell'iperossigenazione di mosti della varieta' a bacca rossa Lambrusco a foglia frastagliata vinificata in bianco. Il trattamento con ossigeno determina abbattimenti in polifenoli totali comparabili a quelli determinati da 210 g carbone/hL. L'azione sugli antociani e' decisamente superiore a quella determinata da trattamenti chiarificanti nei quali il carbone decolorante sia presente entro limiti legali. I vini "iperossigenati" sono in alcuni casi preferiti rispetto ai testimoni tradizionali, in altri non sono discriminabili da questi ultimi al gusto-olfatto
