Treatment of yellow nutsedge (Cyperus esculentus) tuber oil with alkoxides [in order to modify their physical properties]

إنجليزي. A systematic study of the reactions occurring during the treatment of yellow nutsedge tuber oil with alkoxides of silver and sodium have been investigated. Progress and analytical characteristics of the directed interesterification reaction was monitored by using modern standard methods. Fatty acid changes and triglyceride distribution, especially the disaturated monounsaturated (GS2U) and trisaturated (GS3) were observed. Silver methoxide produced the highest amount of GS2U, followed by the sodium methoxide; of note is the high content of the 2-oleopalmitostearin fraction from the silver methoxide interesterification. Possibility of the formation of a three membered ring silver-multiple bond complex intermediate and its implication on the GS2U formation during the silver alkoxides interesterification reactions are discussed

إيطالي. E' stato condotto uno studio sistematico delle reazioni che intervengono durante il trattamento dell'olio dei tuberi di Cyperus esculentus con alcossidi di argento e di sodio. Lo sviluppo e le caratteristiche della reazione di interesterificazione guidata sono stati controllati con moderne tecniche analitiche. Sono stati osservati i cambiamenti che avvengono negli acidi grassi e nella distribuzione dei trigliceridi, in modo particolare nei trigliceridi disaturi monoinsaturi (GS2I) e trisaturi (GS3). Il metossido d'argento produce la maggior quantita' di GS2I, seguito dal metossido di sodio; in particolare e' da segnalare l'alto contenuto di 2-oleopalmitostearina derivante dalla reazione con metossido d'argento. Vengono discusse le possibilita' di formazione di un complesso intermedio a tre anelli dove l'argento e' legato con legami multipli e l'azione di questo nella formazione del GS2I durante l'interesterificazione con alcossidi d'argento
